做法:春笋切成片后加少许盐捞出(chū )后用清水浸泡(pào ),生姜切片,葱(cōng )切(qiē )成段。锅烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片、葱段翻(fān )炒1分钟左(zuǒ )右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖(gài )上锅盖大火煮开后转中火(huǒ )。煮到水快(kuài )熬(áo )干的时候加入(rù )盐(yán ),翻炒均匀稍(shāo )收汁(zhī )时盖上(shàng )锅盖焖(mèn )。 -
