做(zuò )法:洗净宰好鲫鱼,洗(xǐ )净淮(huái )山和薏米。用清(qīng )水把(bǎ )陈(chén )皮(pí )泡软,拍裂一小块姜,热锅,用姜块在锅上(shàng )擦一遍,放两勺油,待油(yóu )六成热下鱼,煎至微黄。煮(zhǔ )沸瓦煲里的清水,放入煎煮好(hǎo )的鲫(jì )鱼和(hé )其他材料,武火(huǒ )煮沸,转中(zhōng )小火煲(bāo )一个半小(xiǎo )时,下盐(yán )调味即可品尝。 -
