做(zuò )法:洗净宰好(hǎo )鲫(jì )鱼,洗(xǐ )净淮山和薏米。用清水把陈皮泡软,拍裂一(yī )小块姜,热锅,用姜块在锅上擦一遍,放两(liǎng )勺(sháo )油,待油六成热下(xià )鱼,煎(jiān )至(zhì )微黄。煮(zhǔ )沸瓦煲里的(de )清水,放入煎煮好的鲫鱼和其他材料,武火煮(zhǔ )沸,转中(zhōng )小火煲一个半(bàn )小时(shí ),下盐调味即可品(pǐn )尝。 -
